Nasya
The aging process of ghee is indeed considered valuable in Ayurveda. The quote from Ashtanga Hridayam highlights the benefits of old GHEE in treating various health conditions.

- "शिरः कर्नशियोनिजन्" - disorders related to the head, throat, or eyes
- "पुराणं जयति व्याधीन" - old ghee conquers diseases
- "व्रणशोधनरोपनम्" - and helps in wound healing and skin nourishment
Aging ghee allows it to develop a more complex flavor and aroma, and it's believed to enhance its medicinal properties. The slow oxidation process that occurs during aging is thought to increase the levels of beneficial compounds like conjugated linoleic acid (CLA) and fat-soluble vitamins.
